Simple Corn Bread




1-1/4 cups of all-purpose flour

¾ of Corn Meal

¼ cup of Stevia

2 tsp of baking powder

½ tsp of salt (if desired)

1 cup of Soy or Almond milk

¼ cup of canola oil

1 egg, beaten



Preheat oven to 400° F. Grease an 8 or 9-inch pan with coconut oil. Combine dry ingredients first. Then stir in milk, oil, and egg, mixing until dry ingredients are moistened. (Optional: wait 5 minutes for a crown top, before proceeding with the next step). Pour batter into prepared pan. Bake 20 to 25 minutes or until light golden brown. Serve warm. ( I like to rub coconut oil all over when done)

Optional: You can substitute “Vanilla” Soy or Almond milk for Original Soy. A simple change like this will give your bread more of a cake-like flavor without it actually tasting like cake. I do this sometimes to change it up a bit.
