Norwegian Chicken

Norwegian Saffron Chicken or Hen

Norwegian Saffron Chicken (or

1 whole hen or chicken cut in quarters

2 cinnamon sticks (it’s fresher)

1 anise

½ cup of flour

1 cup of couscous

Pinch of saffron

1 bay leaf

¼ cup of raisins (or less)

Pinch of salt (as desired)

2 tabs of grape seed oil

A cast iron pan with lid (for the oven)

Pan (for stovetop)



Preheat pan to medium high heat. Also, preheat the oven to
350 degrees.

Crush the 2 cinnamon sticks until fine and place in a medium
sized bowl. Then crush saffron and place into bowl with cinnamon. Add flour and
1 tabs of oil and mix all together.

Add 1 tabs of grape seed oil to the preheated pan.  Coat your hen with the mixture. Then place in
the preheated pan and brown on both sides.

Place couscous in cast iron pan with bay leaf, anise, and
raisins and cover with water. Do not over wet or cover too much.  Just enough to barely cover couscous.

After browning the hen, add to the cast iron pan with couscous
and cover with lid. Then place in the oven and cook for about 1 hour and 30
mins for hen and 1 hour and 45 mins for chicken.

Serve with a vegetable of your choice, preferably bitter
greens, and of course, good white wine. Enjoy!
